Oil Free Pesto

This vibrant and fresh pesto takes only 5 minutes to make and is bursting with flavor. In my opinion, you don’t need tons of oil to get a delicious pesto sauce. This pesto is obviously delicious with pasta topped with some roasted cherry tomatoes. I also love to add it to a grilled veggie wrap. I hope you enjoy!

Ingredients:

1 cup basil leaves

1.5 cups of spinach

2 cloves of garlic (Raw is good- but I reccomend roasting a few cloves of garlic in your oven for around 10 mins!)

3-4 tablespoons of nutritional yeast

1/3 cup walnuts

1/3 cup white beans

1/4 cup hot water

Juice of half a lemon

Salt and pepper to taste

Directions:

1) Add everything into a blender or food processor and blend! Taste as you go and season accordingly!
