These 4 ingredient peanut butter truffles are the perfect, easy holiday treat. They’re made from simple, whole foods but they taste completely decadent. Grab a cup of tea and a few of these and you won’t be sorry.

Peanut Butter Truffles

Ingredients

  • 1/4 cup peanut butter
  • 4 pitted Medjool dates
  • 1/3 cup almond flour 
  • 1/2 cup chocolate chips

Instructions

  1. Add your dates to a small bowl. Boil some water in a kettle and then pour it over your dates to allow them to soften for a few minutes.
  2. In a food processor, add the peanut butter and softened dates. Blend until a smooth paste forms.
  3. Transfer the peanut butter date paste into a bowl. Add the almond flour and stir to combine. You should get a soft, moldable mixture. If the mix is too sticky to mold into balls, add some more almond flour.
  4. Place the mixture into the fridge while you melt the chocolate.
  5. Melt the chocolate chips. You can use a microwave (30 second intervals, stirring in between) or over a double boiler (I just place a heat safe glass bowl over a small pot of boiling water).
  6. Prepare your truffle making station by getting a plate and covering it with a sheet of parchment paper (to prevent the chocolate from sticking to the plate). 
  7. Mold the truffle mix into little balls. Then, dip each one in the chocolate. I like to use a spoon to help cover the entire truffle with chocolate. Then, transfer the truffle to the plate with parchment paper. Repeat until all the truffles are coated. Finish them off with a sprinkle of sea salt if you're feeling fancy :)
  8. Cool the truffles in the freezer until the chocolate sets. Enjoy! (Store your truffles in the freezer for best texture.)
