Banana Oat Cookies

These oat cookies are the perfect way to experiment in the kitchen. While I offer a recipe below, I rarely follow it so precisely. As soon as I have a few really ripe bananas, I throw them in a bowl with the ingredients below in estimated amounts. Then, I’ll add some chopped apple if I have it, or even pear (pear and date is a great combo!) and then whatever dried fruit combo I want to test out! You can even add chocolate chips if you want.

With that being said, try following the recipe once or twice, then get creative and mix up the add-ins and ratios to your liking!

Banana Oat Cookies

Ingredients:

  • -3 small bananas (make sure they’re very ripe and super spotty!)
  • - 3/4 cup oat flour
  • - 1/2 cup oats
  • - 1 tbsp flax seeds
  • - 1 tsp vanilla
  • - 1/2 tbsp cinnamon
  • - 1/2 tsp salt
  • - 1/2 an apple, chopped into small pieces
  • - 1/4 cup chopped dried fruit (i love dates, prunes, raisins, apricots, mulberries, etc.)

Instructions:

How to cook Banana Oat Cookies

  1. - Preheat your oven to 400 degrees
  2. - Mash your bananas in a medium-sized bowl.
  3. - Add the flax seeds, vanilla, cinnamon and salt. Stir.
  4. - Next stir in the oat flour followed by the oats.
  5. - Lastly, add in the chopped apple and chopped dried fruit. The mixture won’t be thick like normal cookie dough.
  6. - Scoop the mixture into balls on a pan lined with parchment paper. Flatten the balls a little with the back of your spoon so they spread out into a cookie shape. They won’t expand while in the oven.
  7. - Bake for 10-15 minutes or until the bottom is lightly browned.
