Broccoli and Pea Soup

This broccoli pea soup comes together in just 20 minutes. It’s a perfect quick and nourishing meal for those days that we don’t feel like making anything elaborate. So simple, but deliciously rich in flavor and nutrients.

Broccoli and Pea Soup

Ingredients

  • 1 tbsp olive oil
  • 1/2 yellow onion, diced
  • 3 cloves of garlic, diced
  • 2 cups of frozen peas
  • 2 cups frozen broccoli
  • 2 cups of spinach or kale 
  • 1/2 tbsp vegetable bouillon paste *

Instructions

  1. Sautee the diced onion in 1 tbsp of olive oil over low heat for a few minutes until it becomes slightly soft and translucent.
  2. Add the garlic and cook for another minute, stirring often.
  3. Add the frozen peas, broccoli, spinach, bouillon paste and 3 cups of water. 
  4. Put a lid on the pot, turn the heat to medium-high and bring the soup to a boil. Then, turn the heat back down to low and let simmer for 10-15 minutes.
  5. Transfer soup to a blender or food processor. Blend until smooth (I like mine mostly smooth but with a few chunks remaining to give it texture).
  6. Serve with rice, bread or enjoy on its own!

Notes:

*If you don't have veggie stock paste, use a stock cube. You can also sub the water with veggie broth.
