Purple Sweet Potato Patties

These vibrant, flavorful patties are a wonderful way to add color to your dish. The purple color comes from purple sweet potato, but of course, you can make this recipe with any kind of sweet potato (but the color won’t be as amazing).

I served these delicious patties with rice and garlic greens. Top with some hummus or mashed avocado to elevate the dish to a whole new level.

Sweet Potato Patties

Ingredients

  • 2 cups chopped sweet potato, I used purple sweet potato, but feel free to use any kind! (I left the skins on, but feel free to peel)
  • 4 cloves of garlic
  • 1 can of white beans (I used pinto)
  • 1 tbsp ground flaxseed with 4 tbsp water
  • 1/2 lemon
  • 1.5 tsp garlic powder, onion powder and cumin
  • 1 tsp salt
  • 1/2 tsp chili powder
  • 1/4 cup water (if needed)
  • 1/3 cup flour ( I like a mix of oat flour and chickpea flour)

Instructions

  1. Preheat your oven to 400F.
  2. Chop your sweet potato into small chunks. Steam or boil the sweet potato until it's soft and a fork can easily be pierced through.
  3. While the sweet potato is steaming, peel your garlic cloves.
  4. Then, cook the garlic cloves in the oven for roughly 8-10 minutes, or until they are lightly brown and fragrant (your house is about to smell amazing).
  5. When your sweet potato is soft, place it into a bowl and let cool for 5 mins.
  6. In the meantime, add your flaxseeds and water to a small bowl, stir, and set aside.
  7. Then, drain and rinse your beans. Place them to the side.
  8. In a food processor, add the sweet potato, roasted garlic, juice from half a lemon and "flax egg." Blend until it becomes pretty smooth (small chunks are ok). You might have to open the lid and stir a few times to make sure the mixture is smooth throughout.
  9. Then, add the beans and spices and blend again. You may have to add 1/4 cup of water for everything to blend smoothly. I like my mixture to be pretty smooth with some small chunks remaining for texture.
  10. Next, transfer the mix into a medium bowl and add the flour. Stir until well combined. Let the mix set and thicken for roughly 15 minutes.
  11. Once your mix has thickened, form small patties with your hands and place them on a baking tray lined with parchment paper.
  12. Bake the patties in the oven for 22-25 minutes, flipping halfway (to assure that both sides evenly brown).
  13. Let your patties cool for 10 minutes before serving!
