Bite Sized Blueberry Banana Bread

I have to admit, I am far more inclined to cook instead of bake, but this banana bread recipe is so easy and never fails. I prefer this recipe in mini loaf tins because they are personal sized and also super portable for on the go munching. These blueberry banana loaves can be enjoyed for breakfast or even dessert with a little scoop of ice cream! Makes 8 mini loaves or one normal-sized banana bread loaf. I hope you all enjoy the recipe as much as I do!

I like to use mini loaf tins (got mine at Target) but feel free to use a full-sized loaf tin (and adjust the cooking time) or even a muffin pan.

Bite Sized Blueberry Banana Bread

Ingredients

  • 1 cup of coconut sugar
  • 1/4 cup of vegetable oil or vegan butter (melted)
  • 1/4 cup of apple sauce
  • 2 tsp vanilla
  • 1.5 cups of whole wheat flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 3 ripe bananas
  • 3/4 cup of blueberries

Instructions

  1. Preheat oven to 325 and grease the loaf tins
  2. Add the first four ingredients in a bowl and mix well.
  3. Add the flour, baking soda, salt and cinnamon to the bowl and mix well (the mix should be almost like a dough, that is okay!)
  4. Mash the bananas in a separate bowl until as few lumps as possible and add that into the dough mix until the mix becomes a thick batter.
  5. Fold in the blueberries (don't mix too much or the blueberries will squish)
  6. Pour mix into the mini loaf tins or the one big loaf tin
  7. Bake for 45 minutes for the mini loaf tins or an hour for the big loaf tin (or until a toothpick comes out clean)
  8. Let cool for 15 minutes before removing from the tins and devouring!
