2 Ingredient Creamy Pasta

This two-ingredient pasta is perfect for when you want a delicious, healthy and filling meal but only have a few ingredients in your pantry. As I’m writing this, I can’t think of a better time for pantry friendly dishes, like this. Pretty much all of the US is stuck inside for a few weeks due to covid-19. :(

All you need for this recipe is tomato sauce and chickpeas. That’s it. The thought of blending beans into a pasta sauce may seem weird, but trust me on this one, you don’t taste the chickpeas but they add a ton of creaminess (and protein!) Make sure you have a pasta sauce you love, and this will basically be a creamy take on that sauce.

First, wash your beans. Beans are canned in preservatives, usually with a lot of salt, so make sure to wash them for the most neutral flavor.

Next, add your chickpeas and tomato sauce to a blender. Blend until smooth.

Heat up the sauce on the stove while you cook your pasta.

Stir in the sauce. I like to top it with a ton of nutritional yeast. If you have some veggies in the fridge, roast them in the oven and stir in. I love to add roasted zucchini and mushrooms.

Ingredients

  • 1 can of chickpeas (rinsed and drained)
  • 1 jar of pasta sauce

Instructions

  1. Blend the chickpeas and tomato sauce until smooth.
  2. Heat the sauce up on a stove.
  3. Cook your pasta and stir in your sauce.
  4. Optional add-ins: roasted veggies, nutritional yeast to top
