Cauliflower Fried Rice
This is another recipe inspired by getting veggies in my Misfits Market produce box that I didn’t know what to do with! For cauliflower, I usually just add it into a veggie tray bake, but I wanted to try something new this time - and out came this delicious and easy cauliflower fried rice! With the addition of the crumbled tofu, this becomes a surprisingly satisfying and incredibly delicious dish. Seems like cauliflower can really become anything and everything.

Cauliflower Fried Rice
Ingredients
- 1 medium cauliflower
- Frozen stir fry veggie mix (I get mine from Trader Joes)
- 3 cloves of garlic, minced
- A nob of ginger, peeled and grated
- 1 block of extra firm tofu
- 1 tbsp of toasted sesame oil
- 1/4 cup of tamari (or soy sauce)
- 3 tbsp of hot sauce
- Toasted sesame seeds and spring onions to top
Instructions
- Start by ricing your cauliflower, (which is super easy if you have a food processor!) Wash and cut your cauliflower into florets, then blitz it in the food processor until it becomes a "rice".
- In a pan over medium low heat, sauté the garlic and ginger in sesame oil for a minute, until fragrant.*
- Then, add the cauliflower rice and frozen vegetable mix. Turn the heat up to medium. Put a lid on the pan to help the veggies defrost and cook down. Stir regularly.
- Once the veggies thaw, take the lid off and allow the veggie mix to steam. There will be water from the vegetables that will steam off after 5-10 minutes of cooking at medium heat. Continue to stir.
- Then, crumble in the tofu. Add the tamari and hot sauce, stir well to combine. Taste as you go and add any more sesame oil, tamari or hot sauce as needed!
- Serve with toasted sesame seeds and chopped green onions!
Notes:
*If you don't have a food processor, it might be easier to buy pre-riced cauliflower.
