Cookie Dough Cups

Ingredients:
- 1 cup dark chocolate chips (plus 1/4 cup for the filling)
- 1/4 cup cashew butter
- 2 tbsp almond flour (or 1 tbsp almond flour and 1 tbsp vanilla protein powder)
- 1/2 tsp vanilla
- 1/2 tsp salt
Instructions:
- In a small bowl, add the cashew butter, almond flour, vanilla and salt. Start mixing with a spoon and then once it's less sticky, start mixing with your hands (I promise, it will help) until it's a thick cookie dough texture. Then, add the 1/4 cup chocolate chips and use your hands to combine them in the mixture.
- Next, melt the 1 cup of chocolate chips. I make a double broiler with a small pot and heat-safe glass bowl, but you can also melt the chocolate chips in the microwave on 20 second intervals (be careful not to burn the chocolate)**
- Line a muffin tin with muffin liners. Pour a spoonful of melted chocolate into each liner. This will be the bottom of your cups.
- Place the muffin tin in the freezer for 5-10 minutes until the chocolate is hard.
- Then, layer some of the cookie dough mix on top the chocolate.
- Finally, spoonful the last of the melted chocolate on top of the cookie dough to finalize your chocolate cups. Let them set again in the freezer for 10 minutes. Then, ENJOY!
Notes:
** If your chocolate doesn't come out smooth and pourable, add a tablespoon of coconut oil, it will thin out the melted chocolate!
