Protein Cookie Dough 2 Ways

Cookie dough: healthy and high protein edition. This is the perfect for a snack, dessert or the post workout gainz. I hope you eat this by the spoonful like I do.

Protein Cookie Dough

Ingredients

  • 1 can of chickpeas, drained and rinsed
  • 4 dates soaked in 1/4 cup hot water
  • 1tsp vanilla
  • 1/2 tsp salt
  • 1-2 tbsp maple syrup
  • 1/4 cup nut butter (I use peanut butter)
  • 1/4 cup oats
  • 1/4 cup oat flour (you can sub coconut or almond flour)*
  • 1-2 tbsp vanilla protein powder (optional but I like the extra flavor)
  • 1/4 cup chocolate chips

Instructions

  1. Put your dates into a small bowl. Boil some water in a kettle, then pour 1/4 cup over the dates to let the dates soften for a few minutes.
  2. In a food processor, blend your chickpeas for around 30 seconds.
  3. Then, add your dates along the water they were soaking in. Blend until the dates are combined. 
  4. Add the vanilla, salt, maple syrup and nut butter and blend again until the mixture is smooth and the ingredients are well incorporated.
  5. Transfer the mix into a bowl. Stir in the oats, oat flour and protein powder (if using). If the mixture is not firm enough to mold into balls, add another tablespoon of oat flour. 
  6. Then, stir in the chocolate chips. Mold the mixture into cookie dough balls or eat the mixture straight with a spoon!!

Notes:

*You can make oat flour by simply blending oats until they form a fine flour!

  • 1 can black beans (drained and rinsed well)
  • 3 - 4 tbsp maple syrup 
  • 2 tbsp cacao powder
  • 1/4 cup nut butter
  • 2 tbsp water
  • 1 tsp vanilla
  • 1/3 cup plus 1 tbsp of oat flour
  • 1 handful of chocolate chips

Instructions

  1. Start by blending your rinsed black beans until they form a paste.
  2. Then add all of the other ingredients (apart from the oat flour and chocolate chips) and blend again.
  3. Transfer the mix into a bowl. Stir in your flour and then the chocolate chips until well combined.
  4. Put the mixture into the fridge for 30-45 minutes until it has firmed up.
  5. Form the cookie dough into balls or eat straight out of the bowl ;)
