Quick and Easy Thin Mints (GF & Vegan)

Ingredients

  • 1 cup almond flour
  • 1/2 tsp baking powder 
  • 1/2 tsp baking soda
  • 2 tbsp cacao powder
  • 2 tbsp refined coconut oil, melted
  • 2 tbsp maple syrup
  • 3/4 tsp mint extract
  • 1 cup dark chocolate chips

Instructions

  1. Line a baking tray with parchment paper and preheat your oven to 350F.
  2. Into a bowl, sift the almond flour, baking powder, baking soda and cacao powder.
  3. Then, add the melted refined coconut oil, maple syrup and 1/2 tsp of the mint extract. Stir until combined. It will feel dry at first, but as you continue to mix, it'll form a soft dough.
  4. Using your hands, take a small about of mixture and mold it into a small ball (a little smaller than a golf ball). Then gently press down to flatten it into a cookie. They won't expand or puff up much in the oven, so form them into the size of the cookie that you desire. Do this with the rest of the dough, placing each cookie on the parchment paper.
  5. Bake the cookies for 8 minutes. Then, flip them each and bake for another 3 minutes.
  6. Transfer the cookies to a cooling rack, or let cool on the pan. When they are completely cool, they'll become the crunchy texture we want.
  7. When the cookies are cool, melt the chocolate. Add 1/4 tsp of mint oil to the melted chocolate and stir through.
  8. Dip each of the cookies into the chocolate and coat completely. I like to use a fork for this process. Then, transfer each chocolate-coated cookie onto a plate lined with parchment paper to prevent sticking.
  9. Put the cookies in the freezer until the chocolate has set - and that's it!*

Notes:

I store my cookies in the freezer for best texture!
