Simple Lentil Dahl
Simple lentil dahl - the perfect hearty, flavorful and ridiculously delicious dish. Serve over some rice for the perfect meal.
Simple Lentil Dahl
Ingredients
- 1 tbsp olive oil
- 1/2 yellow onion
- 2 cloves of garlic
- 2 tbsp grated fresh ginger
- 1 tbsp curry powder
- 2 tsp cumin
- 1/2 tsp coriander
- 1/2 tsp turmeric
- 1 tsp salt (or more to taste)
- 1 can diced tomatoes
- 1 can coconut milk
- 1.25 cups red lentils
- 1/5 cup water
- Juice of 1/2 a lemon
- A few handfuls of spinach
Instructions
- In a pan over medium-low heat, sautee the onion, garlic and ginger in the olive oil for 3-5 minutes. Turn down the heat if the veggies start to char instead of become translucent.
- Stir all of the spices into the sauteed onion, garlic and ginger.
- Add canned, diced tomatoes, coconut milk and water. Turn up the heat and bring to boil. Then, cover with a lid and turn heat to low and cook for 30-45 minutes or until the lentils are fully cooked.
- Lastly, stir in a few large handfuls of spinach and the juice of half a lemon. Serve on it's own or over rice :)
