Simple Lentil Dahl

Simple Lentil Dahl

Ingredients

  • 1 tbsp olive oil
  • 1/2 yellow onion
  • 2 cloves of garlic
  • 2 tbsp grated fresh ginger
  • 1 tbsp curry powder
  • 2 tsp cumin
  • 1/2 tsp coriander
  • 1/2 tsp turmeric
  • 1 tsp salt (or more to taste)
  • 1 can diced tomatoes
  • 1 can coconut milk
  • 1.25 cups red lentils
  • 1/5 cup water
  • Juice of 1/2 a lemon
  • A few handfuls of spinach

Instructions

  1. In a pan over medium-low heat, sautee the onion, garlic and ginger in the olive oil for 3-5 minutes. Turn down the heat if the veggies start to char instead of become translucent.
  2. Stir all of the spices into the sauteed onion, garlic and ginger.
  3. Add canned, diced tomatoes, coconut milk and water. Turn up the heat and bring to boil. Then, cover with a lid and turn heat to low and cook for 30-45 minutes or until the lentils are fully cooked.
  4. Lastly, stir in a few large handfuls of spinach and the juice of half a lemon. Serve on it's own or over rice :)
