Soft Baked Chocolate Peppermint Cookies

A holiday twist on a normal chocolate chip cookie … but make it vegan and gluten free.

Chocolate Chip Peppermint Cookies (GF and Vegan)

Ingredients

Wet Ingredients
  • 1/2 cup creamy, natural almond butter
  • 1/4 cup maple syrup
  • 1/4 cup coconut sugar
  • 1 tsp vanilla extract
  • 1 tsp mint extract
  • 1 flax egg
  • 2 tbsp cacao powder
Dry Ingredients
  • 1/2 cup oat flour
  • 1/4 cup almond flour
  • 1/2 tsp baking soda and baking powder
  • Chocolate chips

Instructions

  1. Make the flax egg by combining 1 tbsp of ground flax with 3 tbsp water in a small bowl. Set aside to thicken.
  2. In a bowl, combine the wet ingredients.
  3. If you're making your own oat flour, blend the oats until they become a flour. Then, sift the homemade oat flour to assure you have a fine flour consistency.
  4. Add the dry ingredients (except the chocolate chips) to the wet ingredients. Stir well. Then fold in all the chocolate chips your heart desires.
  5. Place the dough in the fridge to chill for 10-15 minuets. In the meantime, preheat oven to 350F and line a baking tray with parchment paper.
  6. Scoop spoonfuls of chilled dough and mold into balls, place on parchment paper. Then, lightly flatten each cookie dough ball to help them spread out in the oven.
  7. Bake for 10-14 minutes. Remove from oven and let the cookies cool and set before eating! :)
