Wholesome Pear Cake Author: Rachel DombWith ImageWithout ImageWholesome Pear CakeIngredients2 cups of oats (blended into a flour)1 cup of almond flour2 tsp baking powder1 tsp cinnamon1 tsp ginger1/2 tsp salt3/4 cup coconut sugar1/4 cup coconut oil (melted)2/3 cup non-dairy milk2 tsp vanilla3 pearsInstructionsPreheat oven to 350FDice 3 pears into cubes and set them aside for the time being.Into a large bowl, sift your oat flour, almond flour baking powder, cinnamon and ginger.In a small bowl, add the coconut sugar, melted coconut oil, plant based milk, vanilla and salt. Mix well.Mix the wet ingredients into the dry. Then, add the chopped pear into the batter and gently mix again.Grease a 9x9 baking dish with some oil, then add the batter.Bake for 30-40 minutes. The top will be golden brown and a toothpick will come out clean.Let cool, then enjoy!
