Wholesome Pear Cake

Ingredients

  • 2 cups of oats (blended into a flour)
  • 1 cup of almond flour
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp ginger
  • 1/2 tsp salt
  • 3/4 cup coconut sugar
  • 1/4 cup coconut oil (melted)
  • 2/3 cup non-dairy milk
  • 2 tsp vanilla
  • 3 pears

Instructions

  1. Preheat oven to 350F
  2. Dice 3 pears into cubes and set them aside for the time being.
  3. Into a large bowl, sift your oat flour, almond flour baking powder, cinnamon and ginger.
  4. In a small bowl, add the coconut sugar, melted coconut oil, plant based milk, vanilla and salt. Mix well.
  5. Mix the wet ingredients into the dry. Then, add the chopped pear into the batter and gently mix again.
  6. Grease a 9x9 baking dish with some oil, then add the batter.
  7. Bake for 30-40 minutes. The top will be golden brown and a toothpick will come out clean.
  8. Let cool, then enjoy! I like to have mine as a breakfast with some coconut yogurt and berries :)
