Strawberry Cream Overnight Oatmeal

I don’t know if you’re like me, but I never spend a lot of time preparing elaborate breakfasts in the morning. I usually go for something easy and yummy, like peanut butter toast or oatmeal. If you’re like me and want an easy but delicious breakfast, this is the recipe for you.

Simply create a strawberry milk, stir it into the oats and leave overnight. I also love to use raspberries in place of strawberries for a lovely raspberry cream oatmeal.

4 ingredients, less than 5 minutes and one delicious breakfast.

If you make this, I'd love to see it! Snap a picture and tag me on instagram @rooted_living_ and let me know how you like it. :)

Strawberry Cream Oatmeal

Ingredients

  • 1/2 cup oats
  • 1 cup strawberries (or raspberries!)
  • 1 cup non dairy milk
  • 1 tsp vanilla
  • Optional: 1 spoonful of vegan yogurt

Instructions

  1. Blend the milk, strawberries and vanilla together until you have a smooth strawberry milk.
  2. Put the oats into a jar and pour the strawberry milk in. Mix thoroughly, making sure there are no dry oats at the bottom of the jar. Stir through a spoonful of vegan yogurt if you want extra creamy oats.
  3. Place the oatmeal in the fridge for a few hours or overnight.
  4. Take the oats out, top with extra berries and vegan yogurt if using, and enjoy!
