Sweet Potato Falafels

These baked sweet potato falafels are packed with nutrients and flavor. These aren’t like traditional falafels, which are fried and chickpea-based, they are wholesome and veggie-packed and pair well with so many delicious meals (including my homemade hummus recipe!)

And a bonus, these are SO easy to make, they take just about 35 minutes to come together. They’re so perfect for a quick and easy lunch or dinner. I love these falafels in a bowl with some quinoa, fresh chopped tomatoes, and of course, hummus. Or try them in a wrap with some avocado and.. more hummus.. yum.

If you are still looking for that nostalgic crispiness of fried falafels, try crisping these up in a pan with a little bit of olive oil before serving.

Sweet Potato Falafels

Ingredients

  • 1 medium to large sweet potato 
  • 1 can of white beans (like cannellini), rinsed and drained
  • 1 tbsp ground flax seeds
  • 1 heaping tbsp nutritional yeast
  • 1.5 tsp cumin 
  • 1.5 tsp of a mixed herb seasoning 
  • 1 tsp garlic powder
  • 1/2 tsp salt, pepper and onion powder
  • 1 cup oat flour

Instructions

  1. Add your ground flax seeds to a small bowl with 2 tbsp water. Mix and put aside.
  2. Peel and chop your sweet potato into small chunks. Steam or boil until they're soft and a fork can easily be pierced through.
  3. Make your oat flour by blending your oats until they become a fine flour. Set aside.
  4. Once the sweet potato is cooked, add it to a food processor with the white beans and the ground flax seeds. Blend the ingredients until it becomes a smooth batter but still has some texture to it. You may need to stir the mix a few times in between blending to make sure there's an even consistency throughout.
  5. Transfer the sweet potato mix to a medium size bowl and add the rest of the ingredients (the spices, nutritional yeast and cup of oat flour). 
  6. Put the mixture into the fridge and let thicken for 15-20 minutes.
  7. In the meantime, preheat your oven to 400F and line a tray with parchment paper. 
  8. Once the mixture has thickened, use your hands to mold the batter into balls.
  9. Cook the falafels for 15-20 minutes or until they are golden.
