Vegan Banana Walnut Cake

Do you have some bananas that are going brown? Are you sick of making banana bread for the hundredth time? If you are, it’s time for some banana walnut cake. It has a moist and decadent texture and a deep cinnamon banana flavor. And the walnuts add a perfect crunch.

Enjoy with some tea or coffee. Or warm it up and serve with vanilla ice cream. Yum.

About the ingredients:

Spelt flour: I use a mix of whole wheat and spelt flour. I find that spelt flour prevents the cake from being too dense, which whole wheat flour tends to do. Using a mix of spelt and whole wheat flour allows the cake to be fluffy while also maintaining a more moist cake-like texture.

Apple cider vinegar: This might seem like an odd ingredient to add into a cake, but when you mix apple cider vinegar into non dairy milk, it creates a vegan buttermilk! The vinegar curdles the plant milk in the same way that buttermilk curdles.

Ground flax seeds: Flax seeds are the binding ingredient in this cake. When added to liquid, they become a gel like texture and act like eggs do in baking. Make sure you use ground flax seeds instead of whole flax seeds. If you only have whole flax seeds, blend them for a few seconds until they break down.

Banana Walnut Cake

Ingredients

For The Wet Ingredients
  • 3 large bananas 
  • 1 cup of non-dairy milk
  • 2 tbsp apple cider vinegar
  • 1/3 cup coconut oil
  • 1/2 cup of maple syrup 
  • 1 tbsp ground flaxseed
  • 1 tbsp vanilla
For The Dry Ingredients
  • 1 cup of whole wheat flour 
  • 1 cup spelt flour (or sub for another cup of whole wheat flour)
  • 1/2 tbsp baking powder
  • 1/2 tbsp baking soda
  • 1/2 tbsp cinnamon
  • 1 tsp salt 
  • 2/3 cup walnuts (brake them up with your hands a little so there aren't any very large chunks)

Instructions

  1. Preheat your oven to 400F. Line an 8x8 baking dish with parchment paper or oil it generously. 
  2. In a small bowl, add your milk and apple cider vinegar and mix well.
  3. Put your coconut oil in a small bowl and microwave for 15-20 seconds until melted.
  4. In a large bowl, mash your bananas. Then, add the rest of the wet ingredients (including the milk and coconut oil). Mix well.
  5. Then, add all of your dry ingredients into the bowl, except the walnuts. Fold in the dry ingredients until just incorporated, but make sure not to overmix or your cake will be too dense. 
  6. Lastly, add your walnuts and gently stir them through.
  7. Transfer your mix into your parchment-lined baking dish and bake for 45-50 minutes. The top should be golden brown. 
  8. Make sure to let the cake cool for 20-30 minutes before slicing. This will allow the inside of the cake to finish cooking and setting.
