Granola Berry Yogurt Bars

The perfect summer snack or dessert. Light and yummy. Comes together with minimal effort and time and trust me, everyone will love it :)

Granola Berry Yogurt Bars

Ingredients:

Granola Base
  • 1/4 cup peanut butter
  • 3 tablespoons maple syrup
  • 1 tsp cinnamon
  • 1 cup oats
  • 1/4 cup oat flour
  • 1/4 cup seeds (I used pumpkin seeds)
  • Optional: 1/4 cup buckwheat groats or oat groats *
Jam and Yogurt Layers
  • 1 cup frozen berries
  • 1/2 tbsp chia seeds
  • 1 cup plain or vanilla yogurt (I used dairy-free)

Instructions:

  1. In a small pot over medium-low heat, add your frozen berries. Let them cook down for around 5 minutes, stirring often, until the berries become a jam consistency. Then, turn off the heat and stir in the chia seeds. Set aside.
  2. In a bowl, add your peanut butter, maple syrup and cinnamon. Whisk together with a fork until the mixture becomes smooth.
  3. Add the oats, oat flour, seeds and groats (if using) and mix again until well combined.
  4. Line a small oven dish with parchment paper. Spread the granola mixture evenly on the baking dish. 
  5. Then, add a layer of jam. 
  6. Finally, spread the yogurt layer on top.
  7. Pop it in the freezer to set for around 30 minutes. Then, take them out, cut into slices, and enjoy!

Notes:

*Buckwheat or at groats are different than plain oats. They add a crunchy element to the granola base but are completely optional.
