Harrisa Roasted Veggies

This dish Is unbelievably delicious for how easy it is. Harissa paste completely transforms roasted veggies by infusing a slightly spicy and garlicky flavor. I love to add these veggies to any bowl, salad or wrap (but to be honest, I eat like half the tray before any can make it on my plate).

Harissa Roasted Veggies

Ingredients

  • 1/4 cup harissa paste
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp salt 
  • A try full of mixed veggies (I love zucchini, eggplant, pepper, red onion, and broccoli. But use whatever you have in the fridge!)

Instructions

  1. Preheat your oven to 400F.
  2. Chop up your veggies and put them on a parchment lined pan.
  3. In a small bowl, mix the harissa paste, olive oil, garlic powder and salt.
  4. Put the harissa sauce on the veggies and use your hands to make sure all the veggies are coated in the sauce.
  5. Roast your veggies in the oven for 30-40 minutes or until the veggies are cooked through and slightly crispy!)
