Put your cashews into a small bowl. Boil some water in a kettle, then pour the boiling water over the cashews until they are fully covered. Cover the bowl with a plate and let the cashews soften for about 10 minutes.
Peel your cloves of garlic and put them on a small tray. Either spray them with an olive oil spray or put roughly 1/2 tsp of olive oil on them. Cook for 10 minutes or until they are golden brown and fragrant.
Once the cashews are slightly soft, add them in a blender with 1/2 cup water and blend until you get a smooth cashew cream.
Then, add the avocado, juice from half a lemon, roasted garlic and salt/pepper. Blend again until you have a smooth and creamy avocado crema!
