PB & J Cups
PB & J Cups
Ingredients:
- 1 cup dark chocolate chips
- 1/4 cup peanut butter butter
- 1 tbsp almond flour
- Pinch of salt (only if your peanut butter is unsalted)
- 1/3 cup jam (I used my easy homemade jam)
Instructions:
- In a small bowl, mix the peanut butter, almond flour, and salt until well combined.
- Melt your chocolate chips with a double boiler or in the microwave at 30-second intervals (make sure to not burn it). *
- Line a muffin tin with liners. Spoon a bit of the melted chocolate into each liner. Use the back of your spoon to spread out the chocolate evenly around the bottom and up the sides a little bit.
- Then, place the cups in the freezer for 5-10 minutes or until the chocolate is hard.
- When the chocolate has set, add some of your peanut butter mixture to each cup. Then, layer a little bit of jam on top. Lastly, top the cups with another layer of melted dark chocolate until the whole top is covered.
- Place back in the freezer for another 10 minutes or so. Then, enjoy the PB&J goodness!
Notes:
*If your chocolate isn't melting into a thin mixture, add 1/2-1 tbsp coconut oil and try melting again.
