PB & J Cups

Ingredients:

  • 1 cup dark chocolate chips
  • 1/4 cup peanut butter butter
  • 1 tbsp almond flour
  • Pinch of salt (only if your peanut butter is unsalted)
  • 1/3 cup jam (I used my easy homemade jam)

Instructions:

  1. In a small bowl, mix the peanut butter, almond flour, and salt until well combined.
  2. Melt your chocolate chips with a double boiler or in the microwave at 30-second intervals (make sure to not burn it). *
  3. Line a muffin tin with liners. Spoon a bit of the melted chocolate into each liner. Use the back of your spoon to spread out the chocolate evenly around the bottom and up the sides a little bit.
  4. Then, place the cups in the freezer for 5-10 minutes or until the chocolate is hard.
  5. When the chocolate has set, add some of your peanut butter mixture to each cup. Then, layer a little bit of jam on top. Lastly, top the cups with another layer of melted dark chocolate until the whole top is covered.
  6. Place back in the freezer for another 10 minutes or so. Then, enjoy the PB&J goodness!

Notes:

*If your chocolate isn't melting into a thin mixture, add 1/2-1 tbsp coconut oil and try melting again.
